Famous Butter Chicken---so moist & delicious!!

Ok I've made this about a dozen times already and everytime I make it, I get rave reviews & people ask me for the recipe.  Sometimes chicken breast, depending on how you make it, can taste dry & rough.  However, in this recipe, the chicken is sooooo tender, juicy & moist that it just melts in your mouth & you can't get enough!! Well at least my family & I can't.  And the best part of all of this is that this recipe is so EASY to make, with few ingredients to buy...test it out & let me know what you think.  FYI...I got this recipe from http://www.allrecipes.com/  so it isn't my own to claim, but I like sharing the recipes that I've tried & have turned out really yummy!!

Ingredients


2 eggs, beaten
1 cup crushed buttery round cracker crumbs
1/2 teaspoon garlic salt
ground black pepper to taste
4 skinless, boneless chicken breast halves
1/2 cup butter, cut into pieces
 
Directions


Preheat oven to 375 degrees F (190 degrees C).

Place eggs and cracker crumbs in two separate shallow bowls. Mix cracker crumbs with garlic salt and pepper. Dip chicken in the eggs, then dredge in the crumb mixture to coat.

Arrange coated chicken in a 9x13 inch baking dish. Place pieces of butter around the chicken.

Bake in the preheated oven for 40 minutes, or until chicken is no longer pink and juices run clear.

Creamy Chicken Enchiladas | A Recipe Blog with Step-by-Step Photos

I made these Chicken Enchiladas by following the recipe on this website I've linked below. Everyone in my family loved them!! Probably not the healthiest mix of ingredients but they do sure taste good & were easy to make. I just picked up an already cooked Rotisserie chicken at Stater Bros & shred it to save time! Let me know how they turn out if you make them yourself!

My Favorite Mexican Restaurant!!

Hola Cholas!  Everyone that knows me, knows that I loooooove Food & when there's a restaurant or a dish that I REALLY like, I can't help but tell everyone in the world about it.  So...that's why I'm letting all of you know that Bahia in Orange is one of my all-time Favorite Mexican Restaurants!!  Bahia is located off of Chapman & Tustin Ave. Across from Selman Chevrolet.  Here are some of the yummy dishes I've had from there...FYI..I love their rice & beans!!
  • Camarones al mojo de ajo (shrimp sauteed in garlic butter) w/rice & beans
  • Carne Asada Plate
  • Enchiladas (red & green) plate, (cheese, beef & chicken)
  • Carne Asada Torta (yum!! the bread is so soft!)
  • Fried Ice Cream
  • Shrimp Cocktail (yum, in my opinion they have the perfect blend of sauce, avocado, pico de gallo, etc)  I haven't had one better yet!
  • Ceviche
and many more.  Plus you get whole tostadas for your chips with their yummy salsa!!

Unfortunately they do NOT sell Margaritas or mixed drinks here, but they do sell BEER.  And I'm a BIG fan of their Micheladas (Mexican beer, with ice, a salted glass rim, lime juice & red sauce)...make sure you ask for ice because they do not serve it with your beer unless you ask for it.
Next time I go there, I will make sure to take some pictures of the food & atmosphere to post on here!!

Reaching out for help...

UPDATE:  Stacy lost her battle with cancer on April 8, 2010.  She leaves behind a husband & four kids.

My former boss at a previous job, Stacy, has been battling breast cancer which has spread to her brain, chest & liver. Please read her message below & see if you can help out in anyway.
